I really like the software from Rogue Amoeba like Loopback and Audio Hijack. If only they’d develop for PC too

Voicemeeter is all you need for PC. VB-Audio VoiceMeeter Banana

Breakaway Live is more for front-end realtime DSP and uses virtual i/o ports.
