I’ve read up on various plug-ins and can’t seem to get a definitive difference between the two.
Can anyone give me what the differences are?

Vocoder is literally VoicENcoder. You are encoding your vocals with another sound to create a brand new voice like a robot, singing synth or Daft Punk style sound.
Talkbox, I believe, is a unit with a pipe going into it from the 1960s. Talk into is and modify your voice in a “sonovox” style way a bit like JAM Jingles often do.
